Citrus Marinated Chicken Breast with Minted Fruit Salsa

This light and delicious summer meal serves 6.
Ingredients for Chicken:
6 x 5oz boneless skinless chicken breasts
juice and zest of 1 lemon
juice and zest of 1 lime
juice and zest of 1 orange
1/4 cup extra virgin olive oil
salt and pepper to taste

Antipasto Muffuletta Sandwich

The ultimate in eggplant sandwiches, it’s healthy and incredibly tasty.  Enjoy!
Yield: 8-10 portions
Ingredients
1 large round crusty bread
Filling
3  red onions, thinly sliced
2 tbsp balsamic vinegar
½ tsp  sugar
1-2 tbsp  Extra Virgin olive oil
12 rounds  grilled eggplant
½ cup  fresh mint leaves
20 rounds grilled zucchini
1 cup arugula
20 tomato halves, oven roasted
1 bunch thyme
½ c  basil leaves
250 g  goat cheese
20  pieces grilled red peppers, sea salt and cracked black pepper

Groundnut Chicken

I make this delicious chicken recipe over a fire. You’ll need to pound the peanuts into a mash (similar to peanut butter) with a large mortar and pestle.  It’s delicious and best served with couscous.

Caipirinha

Delicious caipirinha is Brazil’s national cocktail. 
Ingredients:
1 lime quartered
1 tablespoon of sugar
1 shot of cachaça
1/2 Cup of ice cubes with water
Place the lime and sugar in the bottom of a glass.
Using the handle of a wooden spoon, crush and mash the limes. Pour the liqueur and ice. Stir well.
Decorate the glass with a slice of lime.
