<p>The rewards of a successful Christmas party will carry on throughout the year. There are many steps to planning leaving it to the demands and challenges of the holiday season is a recipe for headaches. Here are some tips to lighten the burden in planning this years parties:</p>
<p>Things to think about in planning this year’s Christmas party:</p>
<p>Use task lists and schedule deadlines to complete all your planning on time. If it&#8217;s an office party, then the location, budget, and date all three are usually determined by management so you&#8217;re working within limits already. Be mindful of your corporate culture in planning on food and entertainment. (IE food restrictions due to religion)</p>
<p>It is never too early to start organizing. In fact, numerous 500 guests or more companies have completed this planning already. Many of the large facilities are pre-booked on an annual basis with first come first served for the smaller ones.</p>
<p>Book your facility now. The larger the number of guests, the less number of local facilities are available. Why not look at unique locations such as a museum, garden or cultural centre. The environment in these locations create the base decor and give a refreshing feel to the festivities.</p>
<p>Re-think your theme. Successful parties create a common thread that tie everything together using the budget as your guide. Coordinating the entire Christmas program with the menu, decor and entertainment allows for a memorable celebration. An example of this is an international Christmas theme with world food/action stations with matching decor and entertainment.</p>
<p>Poll your employees as to what type of theme and entertainment they would like this year? You could make it a competition! Instead of the comedy show, perhaps they would like to experience a cirque show or a Christmas themed murder mystery? Focus the opportunity for an engaging and interactive party this year.</p>
<p>Guests love to take the dinner table centrepiece home. Why not set up a centrepiece creation competition between departments where the pieces are raffled off to generate money for your favourite charity. Remember to make a note in the invitation that there will be a prize for the department that decks out the most ingenious Christmas centrepiece.</p>
<p>Promote the designated driver concept and these alternative forms of transportation in your invitations. Let’s face it &#8211; drinking and driving never mix. Offer a variety of non-alcoholic beverages for the designated driver and others who prefer not to drink alcohol. If preparing an alcoholic punch, use a non-carbonated base like fruit juice. Alcohol is absorbed into the blood stream faster with a carbonated base. Provide for for alternative modes of transportation for guests range from shuttle, limousine service or passenger vans taxi fare for the end of the evening. Don’t forget to budget for this!</p>
<p>Save a tree and go green e-invites for your event.</p>

<p>Ever wonder how you can create a great party that is fun and safe for your children for less than $60 including gas?</p>
<h3>Considerations for age appropriate parties:</h3>
<ol>
<li>Invite a maximum of children to match the age of the child. An easy guideline is to invite only as many children as your child’s age, plus one. This keeps the party small with young children reducing the opportunity for them to be overwhelmed. Each year your child learns to emotionally handle a larger group of children.</li>
<li>Have the child choose a theme. It makes your job easy (a favorite book, sport, movie, or a TV show. Then they can further help with the planning plus make decorations.</li>
<li>Keep the party simple.</li>
<li>Focus on structured group activities. Individual games focuses on a winner which leaves children out &#8211; maybe even the birthday child.</li>
<li>Always ask parents about food allergies.</li>
</ol>
<h3>Ways to cut birthday party costs without cutting the party experience:</h3>
<ol>
<li>Hold the party in your home</li>
<li>Avoid traditional meal times by holding the party between 2:00 p.m. &#8211; 4:00 p.m. and serve snacks &amp; dessert.</li>
<li>Bake your own cupcakes and let the kids decorate their own cupcake for a fun activity.</li>
<li>Make and hand deliver your own invitations, or “be green” and send e-vites with an RSVP date.</li>
<li>Resist hiring an entertainer or bouncy castle! Kids only remember the fun activities and birthday cake.</li>
<li>Make it a family affair and ask family members plus the guests parents to assist with activities.</li>
<li>Source theme decor from your own home first, then purchase the rest of supplies from economy stores.</li>
</ol>
<h2 style="text-align: center;">ACTIVITIES FOR A BEACH PARTY (GEARED TO 5 YEAR OLDS)</h2>
<p>We chose a beach theme to counter against our snowy Calgary weather. Collect all your colourful beach towels to cover your<br />
party table and inflate all beach air mattresses and balls to decorate the party room.<br />
Welcome each guest at the door with a lei and a tropical sun visor (can be part of their take home goody bag).<br />
Encourage everyone to dress the theme (beach shorts, T shirts, flip flops, sun glasses and visors)</p>
<h3>Simple party activity starters:</h3>
<ol>
<li>Decorate the birthday cupcakes (while the children are calm) using an assortment of frostings and toppings.</li>
<li>Do simple crafts (stickers, buttons with yarn, straw crafts, using little sea shells with beads and pebbles etc. Glue these onto mini frames or juice-cans. You can even use lids and add a magnet on the back.</li>
<li>Save time and purchase simple craft kits for only $1-$2 at the numerous economy stores.</li>
</ol>
<h3>Games for children with energy:</h3>
<ol>
<li>Fill balloons with small treasure based on your theme before you blow them up. For beach we used mini fish, wiggly worms, costume jewelry. The children then pop several balloons and gather their treasures. You can hang, hide or put them in a large garbage bag or box.</li>
<li>Group hunting games (same as Easter egg hunts) This can be treats, treasure chest items or even a puzzle piece to a treasure map that all the children work collectively to put together.</li>
<li>A circle dance of &#8221;Hokey Pokey&#8221; works great and is completely non competitive.</li>
</ol>
<h3>Move into quiet games:</h3>
<ol>
<li>Hand make Lei Necklaces made from yarn, drinking straws, and colored crinkled tissue paper.</li>
<li>Simple relay races such as potato-on-spoon using a beach water toy.</li>
<li>Pin the “crab on the beach”. No winner needed here too!</li>
</ol>
<p>Holding the party mid afternoon reduces the cost on food. Create a mock tail with juice and give it a beach name. Snacks can<br />
include vegetable sticks and dip, seasonal fruit kabobs, mini pita pockets or bagels and finish with the individually decorated<br />
cupcakes.</p>
<h3>BEACH THEMED GOODIE BAGS</h3>
<p>For less than $9, our goodie beach pail was equipped with a shovel had a snorkel face mask strapped to the outside of the pail<br />
and was filled with a house safe beach sponge ball, squiggly florescent worm, a motorized bathtub sail boat plus a colourful<br />
slinky. The children go home in their colourful foam visors (we collected a mixture sharks, butterflies, monkeys and pink<br />
flamingos) Always make a few more in case extra guests arrive &#8211; yes this often happens!</p>
<h3>THANK YOU NOTES</h3>
<p>It is never too soon to teach etiquette to children. Create a list of the guests&#8217; names before the party, and then jot down each gift<br />
beside the giver&#8217;s name as they are opened for thank you cards.<br />
Take photos of the children dressed in theme or put them in front of a prop. Download the photo onto your computer and<br />
colour print them into thank you cards.</p>
<p>The party is a quick two hours, organized with a logical rhythm for child interest and safety and it was super inexpensive. Plus<br />
why not forget our Calgary snow for awhile and transport yourself to the beach? Happy Birthday!</p>

<p>6 servings</p>
<p>20 g sponge cake<br />
20 ml Grand Marnier</p>
<p>Butter &amp; cake flour for the souffle molds</p>
<p>40 g butter<br />
40 g cake flour<br />
200 ml milk<br />
Juice and zest from 1 orange<br />
Pinch of salt<br />
75 g egg yolk<br />
100 g egg whites<br />
55g cane sugar</p>
<p>Directions:</p>
<p>1. Cut sponge cake into small cubes and soak in the Grand Marnier.<br />
2. Butter and then flour the souffle molds.<br />
3. Melt the butter and then add the cake flour, stir into a roux then remove from heat<br />
and let cool.<br />
4. Combine the milk with the orange juice, zest and salt in a sauce pan and bring to a<br />
boil. Remove from heat.<br />
5. Stir the milk in with the roux and whisk until smooth.<br />
6. Place back on the heat and stir until the mixture is a smooth paste.<br />
7. Let cool slightly and gradually whisk in egg yolks.<br />
8. Whip egg whites, add sugar. (Whip until the whites make stiff peaks.)<br />
9. Stir a small amount of whipped egg whites into the batter, then carefully fold in the<br />
rest of the egg whites.<br />
10. Pour a small amount of batter into souffle molds, and sprinkle the Grand Marnier<br />
soaked sponge cake into the molds. Pour the remaining batter over sponge cake.<br />
11. Place souffle molds into a water bath (water should be about 3/4 up the mold) and<br />
heat on the stove.<br />
12. Bake at 400 F (without the water bath). Cook time is appox 20 min. Check doneness<br />
with a clean paring knife.</p>
<p>Garnish with whipped cream and fresh fruit of your choice. Most importantly, enjoy!</p>

<p>As the holidays approach, you may be thinking about taking your romantic relationship to the next level. If so, you may find yourself getting down on one knee, proclaiming your undying love and then popping the big question. The holidays are a perfect time for true Romeos to propose. You can take advantage of the excitement of the season and surprise her with a memorable and romantic proposal that she&#8217;ll never forget. Why not make the holiday season even more joyful by proposing to your sweetheart in a festive and creative way?</p>
<p>We at Simply Elegant love wedding proposals. Hey, that’s why we got into the wedding business in the first place. And we know that when it comes to a marriage proposal, planning is essential. Guys, this means you want to have the ring selected and the time and the place chosen. Seriously. You don’t want to “wing” one of the biggest moments in your life. Do it right, and your marriage proposal will be a<br />
magical moment that you’ll both remember forever.</p>
<p>Where, when, and how is up to you. Some proposals are more private and others are way more public. Your declaration of love could be over a romantic Christmas Eve dinner or it could happen while you and your sweetie are getting your photo taken with Santa.</p>
<p>For those of you still searching for the perfect way to pop the question, here are few romantic suggestions…</p>
<p>Christmas Eve/Day is a perfect time to propose. Hang the ring box like an ornament on the tree. When the last present has been opened, that’s when you can suddenly notice that “there’s still one more<br />
present.” It’s go time, Santa!</p>
<p>Another Christmas marriage proposal idea is to wrap the ring box inside successively bigger boxes so that your sweetheart will think the present is very large. As each layer is opened, the anticipation (and<br />
the laughs) will grow. Get down on one knee right as the last box is opened.</p>
<p>Or you could hang a Personalized Christmas Ornament on the tree. If you use a personalized ornament as a prop, you&#8217;ll need to plan for the proposal far enough in advance to place your order, have it fulfilled, and pick it up or have it delivered. Your proposal ornament can have a straightforward proposal or give you an opening to get down on one knee and propose.</p>
<p>If you and your soul mate are the demonstrative types then a great time to ask the big question is while you’re having your picture taken with Old Saint Nick. Not only is this a great display of public<br />
demonstration of your love commitment – but you‘ll also have a picture taken of the big moment. Again, planning is key. Set this up in advance with Santa and his crew. Let them know what your plan<br />
is. You’ll probably want to make sure you get a few pictures, and having Santa and his gang in on your romantic plans will ensure everything will go off without a hitch. Plus, you and your fiancé will have the pictures to remember your special moment!</p>
<p>Or how about a musical proposal? Arrange to have a group of carolers come to your door to sing your dearest one’s favourite Holiday song. And arrange to have your carolers sing your marriage proposal in<br />
the song’s last verse. As they do, drop down on that knee, profess your love and present her with the ring.</p>
<p>You can’t go wrong with a proposal over a romantic dinner. Take your fiancé-to-be to your favourite restaurant for a romantic dinner. Arrange it with the restaurant ahead of time so that when the meal is<br />
complete, the waiter brings a bottle of champagne to your table. After glasses are poured, make a toast to the time that you and your girlfriend have spent together and the happiness that you’ve shared. Then bring the engagement ring out from your pocket, open the box and ask her to marry you. Your proposal will be an event in her life that she will tell family and friends for the rest of her life.</p>
<p>If the love of your life lives in another city and is flying home to spend Christmas with you, arrange for friends and family to join you at the airport. Make some signs for each person to hold up spelling<br />
out “Will you marry me?” as your sweetheart disembarks. Make sure you’re the one holding the “Me” sign.</p>
<p>Ask her in a winter wonderland; write &#8220;Will You Marry Me&#8221; in fresh snow.</p>
<p>Whatever proposal style you choose, one thing is for certain, the holidays are the perfect time to propose, and we wish you and your sweetheart a life of love, romance, and happiness.</p>

<h3><strong>Ingredients</strong></h3>
<ul>
<li>1065 ml pitted, chopped plums</li>
<li>120 ml water</li>
<li>1500 g white sugar</li>
<li>3 g butter (optional)</li>
<li>49.6 g powdered fruit pectin</li>
<li> 8 half-pint canning jars with lids and rings</li>
</ul>
<h3><strong>Directions</strong></h3>
<ol>
<li>Place the plums and water into a large pot, and bring to a boil. Reduce heat to medium-low, cover, and simmer for 5 minutes. Stir in the sugar, and add butter to reduce foaming, if needed. Bring the mixture to a full, rolling boil over high heat, stirring constantly, and then mix in the pectin quickly. Return the jam to a full boil, and boil for 1 minute, stirring constantly. Remove from heat, and skim off and discard any foam.</li>
<li>Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the plum jam into the hot, sterilized jars, filling the jars to within 1/8 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.</li>
<li>Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.</li>
<li>Remove the jars from the stockpot and place onto a cloth-covered surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area. Refrigerate opened jars for up to 3 weeks.</li>

<p>Home preserving is enjoying a comeback. And why not? Not only are preserved jams and vegetables delicious, but by doing it yourself, you can control additives, preservatives and the amount of salt and sugar in your foods.</p>
<p>When it comes to home preserving, it’s imperative that you know the proper processing methods and the dos and don&#8217;ts of canning from start to finish. This includes everything from the cleaning of jars, to appropriate lids and seals, to the readying of fruits and vegetables in order to process the perfect jar of jam, jellies, fruits, or vegetables.</p>
<p>This means that it is imperative (there’s that word again) that you always use &#8212; and follow &#8212; a tested recipe.  We suggest you buy a good canning book and follow it to the letter. Reliable recipes from reliable sources will get you, yup, reliable results.  Oh, and of course they’ll be incredibly delicious. Sure, that might go without saying, but we’re saying it anyway…</p>
<p>People prepare jellies, jams and pickles for a variety of reasons. Perhaps they can&#8217;t find the certain flavour they want in store. (For instance, peach jam can be difficult to find.)</p>
<p>Others make jams and jellies because they want to offer them as gifts. As well, it can be very rewarding to open up a jar of homemade cranberry sauce at Christmas time to put out with the dinner. And then there’s the simple reason of doing it because it’s simply fun to do.</p>
<p>Here are the four basic tenets of home preserving and canning…</p>
<p>1. Use the freshest produce possible.<br />
2. Follow reliable recipes from reliable sources with current up-to-date information.<br />
3. Follow the recipe to the letter &#8211; do not double, triple or halve recipes.<br />
4. Use proper and clean kitchen equipment, utensils, cloths and dishtowels in a clean kitchen.</p>
<p>Home preserving and canning is all about a temperature-time relationship. Heat can destroy bacteria and other organisms, but it needs a certain amount of time to do its job. That&#8217;s why there are so many different processing times. Each recipe is tailored to the food in the jar.</p>
<p>Some tips on making jams and jellies…</p>
<p>-Making jam and jelly requires a canner with a rack for jars and lids, a preserving kettle, jar lifter, funnel, jelly jars and lids, and a smaller pan to heat the lids. It’s also good to have an old-fashioned dipper for transferring the jam or jelly to the jars, a foam skimmer, and a magnetic wand that lifts the lids from a canning lid rack; this prevents burning your fingers in the boiling water.</p>
<p>-Clean your fruit as soon as possible.  Soft fruit will bruise easily. But don&#8217;t take the tops off the fruit until you are ready to do your jamming.</p>
<p>-To start the jam, melt a little butter or margarine in the preserving kettle to reduce foaming. Then add the crushed fruit.  Always cook everything on high. Never walk away. Keep stirring.</p>
<p>-Add Sure-Jell, stirring to dissolve it in the fruit. Wait until it comes to a full rolling boil so it does not stir down. Then add the measured sugar.</p>
<p>-When the jam cooks to a second full rolling boil, time it for one minute and then stop.</p>
<p>-With a foam skimmer, skim off the excess foam and prepare to jar the jam, using a jar lifter to remove each sterilized jar kept in the hot-water canner. Fill using the funnel and the old-fashioned dipper, wiping the rim of each jar.</p>
<p>-If anything is on the rim there won&#8217;t be a seal, so make extra sure to wipe the rims.</p>
<p>-Tighten the rim firmly but not too tight and then return the jars to the canner proceeding with the other jars.</p>
<p>-Don&#8217;t try to double batch when canning: it doesn&#8217;t work.</p>
<p>Remember, when it comes to home preserving, having the right equipment and following the recipes to the letter is essential in order to make delicious and nutritious jams, jellies, pickles and preserved veggies.</p>

<p>More and more, parents are now packing healthy lunches for their kids to provide them with the nutrients their growing bodies and brain need. The good news is that there are all kinds of lunch box ideas for kids. The even better news is that they’re easy to prepare, healthy, and delicious.</p>
<p>Preparing healthy lunches for your kids may seem like such a daunting task, but it really doesn’t have to be. With minimal preparation and the basic food ingredients, you can create some simple and nutritious lunch box ideas for kids in no time. Honestly!</p>
<p>Now as every parent knows, just because a meal is easy to prepare and healthy doesn’t mean that kids are going to eat it. In fact, the phrases &#8220;healthy&#8221; and &#8220;easy to prepare&#8221; are likely to send kids running to the nearest vending machine. A good way to help improve the odds of your kids eating a vitamin packed prepared lunch box is to make sure that the food is tasty, and they feel vested in the process.</p>
<p>Then there is the controversial subject of fun. Some dieticians believe that making healthy foods fun increases your odds of getting kids to eat them. Others think that it’s important to separate &#8220;fun&#8221; from eating so as not to encourage kids to eat out of boredom or as a form of entertainment.</p>
<p>Which ever camp you fall into, it’s important to help kids learn about healthful eating.</p>
<p>Oh, and having cool lunch boxes to put their meals into also helps…</p>
<p>Now that we’ve taken care of lunchbox style, it’s time to get down to the basics of a well-balanced lunch: It should include protein, grains, veggies, fruit, milk or yogurt and a healthy beverage.</p>
<p>As it was, and as it shall ever be, some kids are pretty darn reluctant to eat their fruits and vegetables. But that’s okay, because we adults can be pretty crafty and find ways to sneak these foods in: For example, add just about any fruit to Jell-O or plain or vanilla yogurt. Another way to sneak in vegetables is by making sweet breads and desserts with vegetables such as pumpkin pie. And homemade soups are a great way of combining lots of good vegetables into a good, healthy meal that kids will eat. Buying a thermos for their lunch box will keep homemade soups nice and hot until lunchtime.</p>
<p>Healthy dips are also a good option. Kids love to have something to dip their fruit and veggies into.</p>
<p>A few simple tricks like this can help you avoid purchasing the store bought pre-packed lunches which are loaded with fat, sodium, sugar and calories. Most of these meals don’t include all the necessary nutrients that children need.</p>
<p>Protein/Grains:</p>
<p>Lean meat sandwiches such as turkey, chicken, roast beef or lean ham<br />
Peanut butter/ apples<br />
2 percent milk cheese or fat free cheese and crackers<br />
Fat free retried bean burritos</p>
<p>Try using different types of breads, buns, rolls, crackers to make fun sandwiches or use cookie cutters to cut the sandwiches into fun shapes.</p>
<p>Veggies:</p>
<p>Grape tomatoes (homegrown or from farmers markets)<br />
Carrot sticks/Baby carrots<br />
Cut up broccoli, cauliflower, peppers<br />
Sweet potato chips</p>
<p>Fruit:</p>
<p>Small pieces of fruit-apples, plums, small bananas, peaches, oranges<br />
Mini raisin boxes<br />
Individual fruit cups<br />
Berries<br />
Grapes (frozen grapes can keep the lunch box cooler)<br />
Melon</p>
<p>Milk/Yogurt:</p>
<p>Snack pudding cups<br />
Drink yogurts<br />
Mozzarella sticks<br />
Cottage cheese</p>
<p>Beverages:</p>
<p>Water bottle<br />
4-ounce 100 percent juice box (children do not need more than this amount a day)<br />
Milk</p>
<p>Tip: freeze a water bottle the night before then put in the lunch box to use as an additional cooler pack.</p>
<p>Going back to school is an exciting and challenging time for the kids and one of the best ways to give them every advantage of getting all they can out of the experience is making sure that they get healthy and delicious meals.</p>

<p>Whether it’s a formal sit-down dinner, an everyday family meal, or a festive party buffet, artfully folded napkins add stylish flair and enhance any occasion. No matter how simply or intricately done, elegant and creative napkin folds transform meals into celebrations.</p>
<p><strong>French Pleat</strong></p>
<p><em>Fold napkin in quarters.<br />
</em><em>Roll the first layer of the napkin toward you to the center.<br />
</em><em>Fold the second layer toward you and under the first </em>- <em>Do not Roll.<br />
</em><em>Leave the same width of the napkin as the rolled edge.<br />
</em><em>Fold the next layer of the napkin away from you and under the second leaving the same width as other two folds.<br />
</em><em>Fold under the right and left side edges to center back. </em></p>
<p><strong>Crown</strong></p>
<p><em>Fold the napkin in half diagonally forming a triangle.<br />
</em><em>Fold the left and right triangle to the top forming a square.<br />
</em><em>Turn napkin to form a diamond. Fold the bottom point 2/3 of the way to the top point and fold the bottom point back again to the base line.<br />
</em><em>Turn napkin over and tuck the far corners into one another forming a round base.<br />
</em><em>Stand a napkin upright and flair out the two top corners to form a Crown. </em></p>
<p><strong>Flame</strong></p>
<p><em>Fold tall four corners of a flat napkin to the center.<br />
</em><em>Fold the bottom half under the top half.<br />
</em><em>Fold the right half over the left half.<br />
</em><em>Turn the napkin clockwise to create a diamond.<br />
</em><em>Roll the top layer toward center forming a band.<br />
</em><em>Turn the second layer under to form a second band.<br />
</em><em>Fold the left and right hand edges under. </em></p>
<p><strong>Trifold</strong></p>
<p><em>Fold the napkin in half diagonally form a triangle with the long point facing you.<br />
</em><em>Fold the far left and right had corners of the triangle toward you to the bottom point.<br />
</em><em>Fold the napkin in half bringing the bottom point under to meet the top point.<br />
</em><em>Lift the napkin at the center to stand upright on the two side edges. </em></p>
<p><strong>Peak</strong></p>
<p><em>Fold the napkin toward on end into quarters.<br />
</em><em>Fold the right and left edge under and towards you creating a triangle at the top of the napkin.<br />
</em><em>Roll the right and left edges up into the base edges of the triangle.<br />
</em><em>Turn the fold over standing the triangle point up with the open edge facing you.</em></p>
<p><strong>Candle</strong></p>
<p><em>Fold napkin in half diagonally forming a triangle.<br />
</em><em>Fold one-quarter of napkin’s base edges, forming a cuff.<br />
</em><em>Turn napkin over. Carefully roll from left to right.<br />
</em><em>Tuck the remaining corner inside the cuff to hold the Candle firm.<br />
</em><em>Position the Candle with the highest point of the napkin facing you. </em></p>
<p>Napkin folding is an art that is easy to master. These simple folds will enhance your table and delight your guests.</p>

<p>Stuffed Pork Rib Roast (with wild mushrooms and mission fig and a port mushroom glaze)</p>
<p>This sumptuous and simply fabulous pork recipe will not only look great on your elegantly dressed dining room table but the taste is out of this world.</p>
<p>Serves 4 people</p>
<p>Ingredients:</p>
<p>2lb pork rib roast<br />
1 cup dried assorted wild mushrooms<br />
2 cups boiling water<br />
1 large shallot minced<br />
1 cup diced dried mission fig<br />
1 tbsp chopped fresh sage<br />
salt and pepper to taste<br />
1 tsp minced garlic<br />
1 tsp sweet paprika<br />
2 cups tawny port<br />
2 tsp olive oil</p>
<p>Method:</p>
<p>Hydrate dried wild mushrooms in boiling water for approximately 15 minutes. Afterwards strain reserving all the liquids. Add together mushrooms, diced fig and sage. In a sauté pan add olive oil and sweat shallots, garlic and paprika until translucent. Add this to mushroom farce and mix well. With a boning knife make a horizontal slit into one end of the pork rib roast without cutting the sides. If you cannot get all the way through, go half way and then turn to the other end and repeat. Take the mushroom fig farce and gently fill cavity of pork rib roast. Season with salt and pepper. Preheat oven to 350 degrees F. Roast pork rib roast until internal temperature reaches 140 degrees F. While roast is in the oven in a sauce pan add reserved mushroom liquid and port and reduce over moderate heat. When roast has reached 140 degrees F, allow to rest for 10 minutes before slicing. Cut in between each bone and plate. With a spoon add a small amount of port mushroom glaze.</p>
