Groundnut Chicken

Groundnut Chicken Recipe

I make this delicious chicken recipe over a fire. You’ll need to pound the peanuts into a mash (similar to peanut butter) with a large mortar and pestle.  It’s delicious and best served with couscous.

1 whole chicken cut up into small chunks
Cook slowly over a fire in large pot with 5 or 6 tomatoes
salt and pepper to taste

When the chicken is roasted, add a little bit of cool water with the ground peanuts and cook till done using a lid.
