No Fuss Marinated Salmon Salad

Talk about totally tasty. Our No Fuss Marinated Salmon Salad is not only a healthy and delicious meal – it’s super easy to make.   Don’t forget to compost any salad ends and table scraps.

Ingredients:

1 pound thin sliced fresh salmon
Marinade:
1 tbsp white sugar
2 ½ tbsp sea salt
1 cup lemon juice
½ cup red wine vinegar
1/4 tsp black pepper
1/4 cup olive oil
1 clove minced garlic
1/4 cup fine diced red onion
2 tbsp chopped cilantro
1/4 tsp ground cumin
2 Roma tomatoes small diced
½ pound mesclun mix

Method:

In a non metallic container, dissolve sugar, salt, in lemon juice and red wine vinegar. Season with pepper and ground cumin. Stir in Olive oil, garlic, onion, tomato and cilantro. Gently mix in salmon. Cover and refrigerate 4 hours.

To serve, drain excess liquid from salmon and reserve remainder of marinade. Divide mesclun mix onto 4 plates. Divide salmon and marinade ingredients atop salads.
