Grilled Maple Glazed Salmon with Burnt Orange

Salmon and Maple Syrup with Burnt Orange
Some of us never stop grilling, no matter how cold it is or what the weather is doing outside. But if the promise of warmer temperatures is luring you back out to the barbeque, this recipe will make you want to grill every chance you get (like you needed a reason).

We also chose this because it features Maple Syrup. And in case you didn’t know, this Saturday is “Maple Syrup Saturday.” I can think of worse things to theme a Saturday around….

Yield 4 people

Ingredients:

4 x 5 oz salmon filets pin bone out
1/4 cup maple syrup
2 oranges
salt and pepper to taste

Method:

Zest 1 orange and then juice it.
Add to the maple syrup.
Season salmon with salt and pepper
Then place in the maple syrup mixture.
Cover and refrigerate for at least 30 minutes, turning once at 15 minutes.
Preheat BBQ to medium heat.
Season with canola oil to prevent sticking.
Remove salmon from marinade, meanwhile reserving marinade for basting.
Grill salmon on both sides basting during the process for a total of 5 – 7 minutes or until salmon is firm to the touch.
For the burnt orange, slice an orange into 4 thick slices.
Place on BBQ during the grilling of the salmon.
Garnish on top of salmon when salmon is cooked.
