Appetizers

Buffet Appetizers:

  • drop off, low maintenance, no staff, hot and table presented appetizers

Chef Station:

  • carving, flambé, specialty desserts

Butler Service:

  • passed appetizers by server

Table Presentation:

  • room temperature and cold platters and trays that are displayed on the table

Buffet

Buffet Self Serve:

  • drop off, low maintenance, no staff

Buffet Full Service:

  • we provide chefs to maintain buffet levels and servers to bus tables

Sit-down

  • food is plated by chefs and served to guests while they are seated at tables
  • menu can range anywhere from 1 to 5 courses

Styles of Catering Definitions

Drop off: We deliver and possibly setup, the client will look after everything else

Food to Go: We prepare all food items and the client picks up food.

Informal Catering
Expectations: Low expectations with considerable lines and waiting times
Restaurant Type: Tournaments, Picnics, Barbecues, Stampede
Guest Count: Up to 450
Where: Home, Facilities, Tents
Service: Buffet and Appetizers
Presentation: All food is presented on disposable paper or plastic products, extremely informal no frills food style
Duties: Staffing is very limited (dinnerware is disposable); service is limited and the client does some of the work
Food Type: Hot or Cold easy food like hotdogs, hamburgers, chili, carved beef, trays
Waiter Ratio: 1/50 guests

Semi-casual Catering
Expectations: Low expectations with considerable lines and waiting times
Restaurant Type: Tournaments, Picnics, Barbecues, Stampede
Guest Count: Up to 450
Where: Home, Facilities, Tents
Service: Buffet and Appetizers
Presentation: All food presented on china with linen table cloths, extremely informal no frills food style
Duties: Staff responsible for setup, bussing china and clean up
Servers only bus tables, there is no personal table service
Food Type: Hot or Cold easy food like hotdogs, hamburgers, chili, carved beef, trays
Waiter Ratio: 1/40

Casual Catering
Expectations: The waiting time is reasonable; servers do not service tables as in restaurants
Restaurant Type: Buffet Restaurants, Casual weddings, Business meetings
Guest Count: Up to 350
Where: Home, Facilities, Tents
Service: Sit-down, Buffet and Appetizers
Presentation: There is no glassware, all food presented on china and linen table cloths, basic table settings
Glassware: No glassware except wine and water provided by catering company
Duties: Staff buses and maintain tables but do not provide table service like pouring coffee, wine, bring drinks, etc.
Food Type: Buffet, appetizer and sit down menus
Waiter Ratio: 1/30

Semi-formal Catering (Buffet or Sit-down)
Expectations: The waiting time is good, same table service as in restaurants but not alcohol or beverages
Restaurant Type: Weddings, Business events
Guest Count: Up to 350
Where: Home, Facilities, Tents
Service: Buffet, Sit Down and Appetizer
Presentation: All food presented on china and linen table cloths plus glassware
Glassware: Staff buses and maintains glassware
Duties: Personal service, coffee and tea, water in pitchers, wine on tables, busing bar glasses, busing
The head table is served by Maitre ‘d
Food Type: Buffet, meal size appetizer and sit down menus
Waiter Ratio: 1/25

Formal Catering (Sit-down)
Expectations: Restaurant environment guest is looked after and receives full service
Restaurant Type: Formal weddings, Formal business events, Home parties
Guest Count: Up to 100
Where: Home, Facilities, Tents
Service: Sit-down
Presentation: All food presented on fine china and linen table cloths, high quality food presentation
Glassware: Staff buses and maintains glassware
Duties: Personal service, wine service, coffee, water, busing, serve drinks to guests, attentive service
The head table is served by Maitre ‘d
Food Type: Buffet, meal size appetizer and sit down menus
Waiter Ratio: 1/16
